Vegetarian Tostada

This recipe is from the P90X nutrition plan


1 large whole wheat tortilla
1 c fat-free canned refried beans
1/4 c tomato, diced
2 T red onion, diced
1 c iceberg lettuce, shredded
2 T low-fat sour cream
2 T salsa

1. Preheat oven to 350 degrees
2. Spray tortilla with corn oil spray and brown tortilla for several minutes until crisp.
3. Meanwhile, heat beans in a small saucepan.
4. Remove tortilla and layer with beans, tomato, onion, lettuce, sour cream, and salsa
